Produce - Escarole
Escarole is a leafy green vegetable and member of the chicory family, along with frisée, endive, and Belgian endive. Also known as such names as broad-leafed endive, Bavarian endive, Batavian endive, and 'scarole, escarole has broad, curly green leaves and a slightly bitter flavor.
Escarole is a good source of vitamins A, K and folate. Other vitamins found in a 1/2 cup serving are vitamins C, E and B. It contains minerals like calcium, potassium, magnesium, phosphorus, iron, sodium,copper, manganese, zinc and selenium.
